These are one of the easiest cookies to make. Few ingredients and totally tasty. Plus they are okay for my friends who are gluten intolerant. AND my sister-in-law actually requested these for her birthday! Definitely a keeper!
There is a nice crunch on the outside from the sugars caramelizing in the oven, and a chewy center from the coconut. Top it with chocolate and…BAM!…glorious. There’s not too much to say about these cookies. They are simple, decadent, and have a great presentation.
Lessons Learned:
- Cookie scoop helps keep the cookie together.
- Be careful with melted chocolate. It is hot. Seems like common sense, but I still get hurt.
- Parchment paper will make clean up soooo much easier!
Coconut Macaroons (GF)

Ingredients
- 2 - 14oz bags of sweetened coconut
- 14 oz can of sweeten condensed milk
- ⅛ cup sour cream
- 2 tsp vanilla
- ½ cup semi-sweet chocolate
- ½ Tbsp butter
Instructions
- Preheat oven to 325 degrees F.
- Combine coconut, sweeten condensed milk, sour cream, and vanilla in a bowl. Mix until thoroughly combined.
- Use a small cookie scoop to portion out the cookies. Pack as much coconut into the cookie scoop. Using the side of the mixing bowl to compress everything together. Since there is no flour in the mixture, this is the best way to keep the cookie in one piece before baking it.
- Place the cookies a couple inches apart on a cookie sheet lined with parchment paper. The cookies won't expand much while baking. Bake cookies for 10-12 minutes or until the edges and tips of the coconut flakes are golden brown.
- Remove the cookies. Let cool for a few minutes on the baking sheet, then transfer to a cooling rack.
- While cookies are cooling, put chocolate and butter into a microwave safe bowl. Microwave for 30 seconds, stir, another 30 seconds, and stir. If the chocolate still hasn't melted, put it in for another 30 seconds. Place melted chocolate in a pastry bag or a plastic sandwich bag with a small corner cut off. Drizzle each cookie with some chocolate. Let cool completely before eating.
