Italian Dressing

I am trying to eat healthy again this week, so of course, my go-to lunch is a salad.  I got tired of the dressings I usually make, so I tried my hand at an Italian dressing.  I was not disappointed.

Why make your own Italian dressing?

This dressing has a great garlic flavor to it.  And the red pepper flakes give it a slight taste of…not even heat, but essence of heat.  The parsley and basil gives it the great “Italian” flavors.  You can mix and match the flavors to make it your own.  It beats the flavors of the typical store bought Italian dressings.

Lastly, this one is going to make its way on to many of my future salads.  Not only does it taste great, but it is super easy to make.  Dump everything into the blender and blend!  Just the way I like it, especially when Mr. Hotness finishes his ration of dressing before the week is up and I have to make him another batch!

Lesson Learned:

  • Have a mint or gum handy for afterwards.  Garlic breath is deadly!
  • Measuring the olive oil with the tablespoon like bartenders do with hard-a and a shot glass made measuring quicker.

Ingredients
  • 6 Tbsp olive oil
  • 2 Tbsp white wine vinegar (I used apple cider vinegar because it was all I had)
  • 2 Tbsp chopped parsley
  • 1 Tbsp fresh lemon juice (I added an extra 1 Tbsp because I like dressings to be a bit more acidic)
  • 2 garlic cloves
  • 1 tsp dried basil
  • ¼ tsp dried crushed red pepper
  • pinch of oregano
  • salt to taste
Instructions
  1. Place all ingredients into a blender. Blend until combined and smooth. It should look creamy.
