Even though it makes my life a little easier, I try not to buy salad dressing at the store because they have way too many preservatives and other chemicals in them. And sometimes I need a break from the easy typical olive oil and vinegar salad dressing. So I am always on the search for a good and easy salad dressing recipe to make my weekly salad lunches a bit more interesting.
Mango just happens to be my favorite fruit, and recently, they have been looking mighty tasty at the store. I thought I would try to make a pureed mango chipotles dressing to brighten up my salad. Since my husband will be eating it too, I needed to add some spice to kick it up a notch. Chipotle goes well with mango, so why not? You see it everywhere these days. Chipotle-mango salsa, chicken, salad, sauce, etc.
This recipe was easy to make (you know how I love an easy blender recipe) and it brought a fresh flavor to my salad. A great dressing to add to the summer salad repertoire.
Lesson’s Learned:
- It doesn’t take many chipotles to get the pepper flavor into the dressing
- If it is too thick, try thinning it out with a little water or more lime juice.
- 1 cup chopped mango
- juice of 4 limes
- zest of 1 lime
- 1 chipotle pepper in adobo sauce
- ½ tsp salt
- 1 Tbsp honey
- 3 Tbsp olive oil
- Place all ingredients into a blender and blend until smooth. Add a little bit of water if you need to thin it out.
