Originally this blog was suppose to be for me to test out new recipes and expand my cooking knowledge. I still intend to do that, but I am starting this blog in a way I never thought I would….with a diet. So starting off, I won’t be posting about sweets and baking, I am going to start off with healthy food. Now this healthy food is going to be damn tasty….at least some of them. Let me tell you about what led up to this. And bear with me, it has been a while since I blogged and it will take me a while to find my groove.
I got married a little over a year ago, and as most women, that was the time that I weighed the least. Since then I have gained about 15 lbs-20 lbs. My clothes don’t fit and I refuse to buy more…except for a “fat” pair of jeans. I am frustrated because I have been trying to diet off and on and nothing has stuck. Stress at work, holidays, lack of time to cook and exercise have really taken a toll on my body. In the last few months, things have started to turn around. I recently started a job that is much less stressful so I am having an easier time to not drink a cocktail after work. My new job is not as time demanding at least for now, so after work I have time to try and exercise. Also, my husband and I purchased our first home which i
s close to a park and community college where I am going to be exercising more. I also have been doing a lot of research on exercise, health, and the Paleo diet.
The Paleo diet is based on eating the way our ancestors did. Our food has evolved faster than we have, and it is destroying our bodies because of it. Grains, dairy, and legumes are mostly agricultural products that have just come into our diets relatively recently in human evolution. Our bodies can’t process these well and cause damage. Also, processed food & fast food has become very dominate in American culture and is in no way nutritious. I am not an expert on the exact science behind this, so do your own research. Anyways, the basics of the diet are to eat naturally fed lean protein, healthy fats, and high nutrient fruits and veggies. This means no dairy, wheat, rice, beans, noodles, alcohol, or other processed food. Its about putting good nutritious food into your body.
I started the diet 2 days ago and so far so good. I am still trying to figure out a quick and easy breakfast. I have been having poached eggs and sweet potato. I’m not a fan of it. Lunch is a salad with cucumbers and grape tomatoes on the side. Dinner is zucchini “spaghetti” with tomato sauce and roasted brussel sprouts. So far I feel good and I feel full after I eat. Next week I am going to do more meat, but after 2 weeks of eating fast food while moving, I needed more veggies.
I made the zucchini noodles with a mandolin and they turned out great. Just salt them and let the extra water drip out for about 10-15 minutes then store in the fridge. You can eat it raw, but I saute them for 5 minutes before putting the sauce on just to soften them up, but not too much or they will get soggy. Good low carb alternative to regular noodles and you get a serving of veggies while you are at it. I definitely recommend doing this!
